AOP Saumur Champigny

Antidote is the result of a de-stemmed whole-cluster barrel vinification. Carrying out a small batch vinification allows us to obtain wines which are more aromatic with rounder, more complex tannins.

This is a cellar-worthy wine which will develop generously over the next 3 years.

Best enjoyed at between 15°c-17°c with characterful dishes and mature cheeses.

Varietal: Cabernet Franc

Age of vines: 15-20 years

Soil type: Calcareous clay subsoil (tufa)

Yield: 35hl/ha

Production: 2,000 bottles/year

Harvest: Hand-harvested

Vinification: Individual parcel vinification, very short fermentation in order to extract lots of fruit and supple tannins.
